Ryusei Nagi event Perfect amount of fruit andA shop favourite! From Hiroshima, where the typical style is soft and pretty, this brewery makes Kimoto sakes with sharpness and structure. Brewed with a local rice called Hattan 35, there is also no yeast added (ambient yeast only). The lactic fermentation gives a nice rich texture with some wildness on the palate, balanced with pretty Asian pear notes. So good!
